Creme De Menthe Brownies image

Nothing better than rich chocolate and cool mint! So yummy!

FOR THE BROWNIES
1/2 c butter
2 oz unsweetened chocolate, cut up
1 c sugar
2 eggs
1/4 tsp mint extract
2/3 c all purpose flour
FOR THE FROSTING
1/4 c butter
1 1/2 c sifted powdered sugar
2 Tbsp green creme de menthe
1 Tbsp milk
FOR THE CHOCOLATE TOPPINGS
1 oz semi sweet baking chocolate
3 Tbsp milk
1/2 c andes mint chocolate candies, chopped (optional)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Grease and flour an 8x8 square pan; set aside.
  • 3. In a medium heavy saucepan, stir 1/2 cup butter and unsweetened chocolate over low heat just until melted. Cool for 5 minutes. Stir in sugar, eggs, and mint extract. Stir just until combined.
  • 4. Stir in flour and spread batter into greased pan.
  • 5. Bake for 20 minutes and cool completely in a pan.
  • 6. For frosting, beat together 1/4 cup butter until fluffy, add in powdered sugar and continue to beat until incorporated, beat in creme de menthe, and milk.
  • 7. Spread frosting over cooled brownies. Refrigerate until frosting is chilled and firm.
  • 8. In the microwave or a small sauce pan over low heat, melt semi sweet chocolate and milk; stirring often. Drizzle chocolate over chilled brownies. Cool at room temp.
  • 9. Sprinkle chopped Andes mint chocolate candies over the top.
