Creamy Southwestern Taco Soup Recipe - (4.4/5) image

1 pound ground beef
1/2 cup onion, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
2 teaspoon sea salt
8 ounces cream cheese, softened
1 can (26-ounce) Ro-tel tomatoes, undrained
1 cup beef broth
1/2 cup heavy cream

Steps:

  • In a large soup pot, brown the ground beef with the onion, bell pepper and garlic; drain well. Add the spices and cook a couple minutes. Drop the block of cream cheese into the meat. With the back of a wooden spoon, smash it into the meat until no bits of white remain. Add the Ro-tel, broth and heavy cream and mix well. Simmer for 30 minutes.
