Creamy Potato Soup image

This is still one of my favorite soups when I'm not feeling well. As with a lot of other soups, it is even better the next day. I have cut up left-over chicken and put it in the soup also.....

Number Of Ingredients 15

6 - 8 medium potatoes, peeled and cubed
1 medium onion, chopped
2 ribs celery, chopped
1 tsp chopped garlic
2 tsp salt (or to taste)
1 tsp black pepper
4 c chicken broth (enough to cover potatoes)
1 pt heavy cream
6 Tbsp butter or margerine
1 c dry, instant potato flakes (for thickening)
OPTIONAL GARNISHES:
bacon bits
sour cream
shredded cheddar cheese
chopped green onion

Steps:

  • 1. Place potatoes, onions, celery, garlic, salt and pepper in the 4 c of chicken broth in a large pot. Add a little water if necessary to cover potatoes.
  • 2. Cover and cook on medium heat for about 30-45 minutes, stiring occasionally, until vegetables are fork tender. Add milk, butter, and potato flakes.
  • 3. Lower heat and simmer a few more minutes or until thickened. Do NOT Boil.
