Creamy Cucumber Salad image

My family requests Aunt Carol's sweet, creamy cucumber salad all summer long! It's so easy to make as a side for any lunch or dinner. Carol's genius tip: If you're in a hurry to eat and don't have time to chill it, add 1/2 cup of ice to cool down the salad!

Number Of Ingredients 6

3 English cucumbers, halved and sliced 1/4 inch thick (about 6 cups)
2 scallions, green and white parts, thinly sliced on a bias
1 cup heavy cream
1/4 cup plus 1 1/2 teaspoons granulated sugar
1/4 cup apple cider vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Put the cucumbers and scallions in a large bowl. Add the cream, sugar, vinegar, 2 teaspoons salt and a few cracks of pepper. Stir to combine. Chill at least 2 hours and up to 4 hours.
