Creamy Cilantro Lime Chicken image

Creamy Cilantro Lime Chicken is a great option for busy weeknights. With only 3 grams of carbohydrates, it's perfect for those who prefer low carb dishes.

Number Of Ingredients 10

1 tablespoon unsalted butter
1 pound boneless, skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
3 cloves garlic (* minced)
1 cup chicken bone broth (* or stock)
1/4 cup cilantro leaves (* minced)
1/4 teaspoon red pepper flakes (* optional)
1/4 cup heavy whipping cream
1 lime (* juiced)

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Season the chicken with the salt and pepper and add to the hot skillet.
  • Cook the chicken until golden brown, about 6-7 minutes. Flip and cook the other side for about 5-7 more minutes or until cooked through and no longer pink in the middle.
  • Remove the chicken to a plate and tent with foil to keep it warm.
  • Add the garlic to the same skillet (no need to clean the pan beforehand). Cook for 30 seconds, stirring constantly.
  • Add the chicken bone broth, 2/3rds of the cilantro, and red pepper flakes, if using.
  • Gently simmer until the liquid is reduced by 1/3, about 10 minutes.
  • Whisk in the heavy cream and half of the lime juice. Taste and add more lime juice, as needed.
  • Place the chicken back in the pan and spoon sauce over the top, if desired.
  • Top with the remaining cilantro.
