Creamy Broccoli Linguine Alfredo - Cass's image

After many requests from my kids...I made them one of their favorite pasta dishes...bacon, chicken or even pork could be added to this simple pasta dish, to make a more complete meal...my kids like it as is... enjoy!

Number Of Ingredients 12

1 pound(s) linguine, cooked - drained as directed on package
2 tablespoon(s) olive oil
2 tablespoon(s) butter
1 bunch(es) broccoli, cut into flourets - i used 3 small heads, equivalent to one large
3 - 4 clove(s) garlic, chopped
8 - 10 - fresh mushrooms, sliced
1 bunch(es) green onions, sliced
1 1/2 cup(s) heavy cream
1/4 - 1/3 cup(s) grated parmesan
1 - 1 1/2 cup(s) shredded provolone cheese
2 - 3 tablespoon(s) fresh parsley, chopped - optional...i didn't use this time
1/2 - 1 teaspoon(s) salt & fresh ground black pepper - or to taste

Steps:

  • Boil your pasta, drain
  • While Pasta is cooking, add butter and oil to a large skillet. Saute the broccoli, onions, garlic and mushrooms, just until tender, stirring occasionally.
  • Add the cream once veggies are tender. Simmer for a few minutes or until the cream starts to thicken some.
  • Add the cheeses, salt,pepper and fresh parsley if using. Stir until the cheese is completely melted.
  • Drain linguine and toss with sauce. I don't rinse pasta, so the sauce adheres a bit better.
  • Serve immediately. Sprinkle with some parsley and extra Parmesan cheese. I served with a tossed salad and some crusty Italian bread.
