CREAMY BASIL SHRIMP OVER PASTA image

Yield 3-4 servings

Number Of Ingredients 10

¼ c butter
1 c cream*
¼ c fresh basil, chopped
¼ c scallions (green onions), chopped (optional)
1 T cream sherry
1 clove garlic, minced
¼ c olive oil
¾ - 1 lb raw shrimp - shells removed (with or without tails as you prefer - either frozen or fresh)
Parmesan cheese, grated
12-16 oz uncooked pasta (or less: see lighter notes)

Steps:

  • Saute shrimp and garlic in olive oil until shrimp turns pink. Add butter, cream, basil, scallions & sherry and simmer for several minutes. Serve over linguine (my favorite), angel hair or any pasta you want and top with Parmesan cheese. Lighter version: combine fat free half and half with some cream & 2-3 oz uncooked pasta per serving Lightest version yet: use all fat-free half & half & 2 oz uncooked pasta per serving
