CREAMY AVOCADO DIP image

Number Of Ingredients 13

2 anchovies or 2 tsp anchovy paste
2 scallions, including white and 3 inches of green, coarsely chopped
1 small clove garlic, peeled
1 T fresh tarragon leaves
2 T coarse chopped fresh chives
2 T fresh flat leaf parsley leaves
1/2 tsp grated lemon zest
1 T fresh lemon juice
1 T tarragon or white wine vinegar
1 small, ripe avocado, Hass, pitted and coarsely chopped
1/4 cup mayo
1/4 sour cream or plain yogurt
salt and pepper

Steps:

  • 1. Place first 6 ingredients in food processor or blender. Pulse until fine chopped, scraping down sides. 2. Add lemon zest, lemon juice, vinegar, and avocado and blend until smooth. 3. Add mayo and sour cream and pulse to combine. Season with salt and pepper to taste. Can be refrigerated up to 3 days.
