Creamed Onions image

This is a delicious side addition to Thanksgiving or Christmas dinner. It's wonderful anytime if you love onions. My Mother made these for many years as did I and it's one of my Sons favorites. Hope you enjoy as much as we do.

Number Of Ingredients 8

2 lb onions, small white or 2-16 oz jars of onions heated and drained
2 Tbsp butter or margerine
2 Tbsp all purpose flour
1/2 tsp salt
1/8 tsp pepper, white or black
1 1/2 c milk, evaporated milk or half and half
1 dash(es) nutmeg or to taste
1 pinch sugar (optional)

Steps:

  • 1. For the fresh onions, add to several inches of salted boiling water. Cover and cook until tender, about 15-20 minutes for small and 30-35 for the larger. Drain and remove skins.
  • 2. Melt butter over low heat. Blend in flour, salt and pepper. Cook over low heat stirring constantly until smooth and bubbly..
  • 3. Romove from heat. Slowly stir in milk of choice. Place back on heat and bring to boiling stirring constantly. Simmer and stir 1 minute.
  • 4. Add nutmeg and sugar if desired. Correct seasoning and pour over onions.
