CREAM SCONES image

Yield 6-8 scones

Number Of Ingredients 7

2 cups all purpose flour
1/3 cup sugar
1 tblsp baking powder
1/2 tsp salt
¼ cup currants
1 1/4 cups heavy whipping cream
1 tsp grated orange zest (optional)

Steps:

  • Preheat oven to 425 and position rack in the center. Have ready a large ungreased baking sheet. Whisk together thoroughly in a large bowl: - 2 cups all purpose flour - 1/3 cup sugar - 1 tblsp baking powder - 1/2 tsp salt Add currants and then whisk together and add: - 1 1/4 cups heavy whipping cream - 1 tsp grated orange zest (optional) Mix with a rubber spatula, wooden spoon or fork just until the dry ingredients are moistened. Gather dough into ball and knead it gently against the sides and bottom of the bowl 5-10 times, turning and pressing any lose pieces into dough each time until they adhere and the bowl is fairly clean. Transfer to a lightly floured surface and pat the dough into an 8" round about 3/4" thick. Cut into 8 or 12 wedges (I do 10-12 wedges) and place at least a 1/2" apart on the baking sheet. Brush the tops with: - 2-3 tsp of cream or milk and cinnamon and sugar (or cinnamon sugar) (optional) Bake til tops are golden brown about 12 -1 5 minutes. Let cool on a rack and serve warm.
