Cream of Broccoli Soup image

I usally make this once a week. Fantastic soup!

Number Of Ingredients 7

2 c broccoli florets
2 c boiling water
3 Tbsp butter
1/4 c all purpose flour
2 tsp instant chicken bouillon granules
dash(es) black pepper
2 c milk or half and half

Steps:

  • 1. In large suacepan cook broccoli in the boiling water for 8-10 minutes. Drain broccoli, reserving liquid.( Add additional water, if necessary, to make 1-1/2 cups liquid.)
  • 2. In same pan melt butter. Stir flour, bouillon granules and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more.
  • 3. Stir in broccoli mixture; heat through.
  • 4. 185 calories and 8 grams carb
