"CREAM" OF BROCCOLI SOUP

Number Of Ingredients 8

1 small cauliflower, chopped into florets
1 1/2 stalks broccoli, chopped into florets, stalk peeled and chopped
1 leek, rinsed well, chopped thin
4 cloves garlic, minced
1/4 cup nutritional Yeast
2 cups vegetable stock
3 cups almond milk, or less
salt and pepper, to taste

Steps:

  • Saute garlic and leeks in a little oil until tender being careful not to burn the garlic. Add cauliflower and almond milk. Bring to a simmer and cook until very soft. Puree. Add nutritional yeast a little at a time to taste. Add broccoli and vegetable stock. Simmer until the broccoli is falling apart. Season with salt and pepper.
