CREAM CHEESE PUMPKIN SQUARES image

Yield (depending on how big you cut the pieces) 12-16

Number Of Ingredients 9

1 15 oz. can pumpkin
2 large eggs, room temp.
8 oz. reduced calorie cream cheese (no fat free)
1/2 cp. splenda
1 tsp. ground cinnamon
1 box "Spice" flavored cake mix
1/2 butter melted
1/2 cup chopped pecans or walnuts
1 cup whipping cream, flavored with 1 tb. rum, or 1 ts. rum extract

Steps:

  • Preheat oven to 350 degrees. Put first five ingredients into mixing bowl and mix until well blended. Pour into a greased 8X13 cake pan. In a separate bowl,combine cake mix, melted butter, and nuts until you get a crumb like consistancy. Top the cream cheese mixtue with crumb mixture. Bake in oven for approximately 35-40 minutes or until topping is light brown in color. Remove from oven, and let sit until room temperature. Beat whipping cream and rum (or extract). Cut into serving size squares, and top with a dollop of whipped cream. Garnish with a sprinkle of fresh grated nutmeg. Enjoy!!
