Cranberry Walnut Salad With Maple Dressing image

My mom made this salad while we were visiting last weekend and it is spectacular! I like that the dressing packs a punch without any chemicals or high fructose corn syrup.

10 cups mixed baby greens
1/2 cup dried cranberries
2 granny smith apples, cored and thinly sliced
1/2 cup coarsely chopped walnuts, toasted
1/4 cup mayonnaise
1/4 cup maple syrup
4 teaspoons champagne vinegar
2 teaspoons sugar
1/2 cup vegetable oil
salt and pepper

Steps:

  • Whisk mayo, maple syrup, vinegar and sugar in a bowl to blend. Gradually whisk in oil until mixture thickens slightly. Add salt and pepper to taste. Dressing can be made up to 3 days ahead of time. Cover and refrigerate. Whisk before using. Toss with salad.
