CRANBERRY SPARKLE MUFFINS image

Yield 12 muffins

Number Of Ingredients 9

2 c AP flour
1 tbsp baking powder
1/2 tsp salt
1/4 c softened butter
1/2 c sugar
2 large eggs
1 c vanilla or plain yogurt
1 c chopped fresh or frozen cranberries
2 tbsp sanding sugar

Steps:

  • Measure first 3 ingredients into large bowl. Stir. Make a well in center Cream butter and sugar in med bowl. Add eggs, 1 at a time, beating well after each addition. Add yogurt. Stir. Add to well. Add cranberries. Stir until just moistened. Fill 12 greased muffin tins 3/4 full. Combine sanding sugar and cinnamon in small cup. Sprinkle on batter. Bake 375 for 18-20 min until toothpick comes out clean. Let stand in pan for 5 min. Remove to wire rack to cool.
