Cranberry Sauce - Karpalokastike image

The lingonberries that accompany so many Finnish dishes, especially pancakes, are difficult to find in this country, but cranberries make a fine substitute. Wash and drain the cranberries. Remove any soft or discolored cranberries and any leaves or stems.

Number Of Ingredients 6

12 oz fresh cranberries (about 4 cups)
1/2 c maple syrup
1 orange, grated rind, juiced
1/2 tsp ground ginger
1/2 tsp ground cardamom
1 dash(es) cinnamon

Steps:

  • 1. Combine all the ingredients in a medium saucepan and cook on medium heat for 10 to 15 minutes, stirring, until the cranberries have popped and the sauce is thick.
  • 2. Serve hot or cold.
