Cranberry Bars/Pie image

I found the basic recipe on Allrecipes.com, but have made a couple of changes. I also saw some that used bisquick on this site. This recipe just made it onto our "gotta have it" list for the holidays. We love cranberries. This can be serveds as a cake, coffee cake, bars and is so adaptable to your family's tastes!

Number Of Ingredients 9

1 cup(s) all purpose flour
1 cup(s) white sugar
1/4 teaspoon(s) salt
2 cup(s) fresh cranberries
1/2 cup(s) chopped walnuts
1/2 cup(s) butter, melted
2 - eggs, beaten
1/2 teaspoon(s) almond extract
1/2 teaspoon(s) vanilla extract

Steps:

  • Preheat oven to 350 degrees. Grease one 9 inch pie plate or 9 inch square pan, whichever you prefer.
  • Combine the flour, sugar and salt. Add the cranberries and nuts; toss to coat. Stir in the butter, eggs and extracts. Spread the batter evenly in the prepared pan. (Note: At this time you could top with your favorite struesel mixture.)
  • Bake for 40 minutes or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.
  • My favorite is to top with a drizzle of powdered sugar/milk glaze. Just enough sweet to compliment the cranberries. Your taste is your imagination!
