Steps:
- Cream butter and sugars. Add egg. Combine dry ingredients and add to butter/sugar/egg mixture until combined. Spread and bake on a quarter sheet pan at 350F for 15 minutes. Cool to touch. Crumble and blend together items below in food processor. 450g oat cookie crust 55g butter, softened 20g, light brown sugar 1g salt Divide evenly amongst 2x10'' pie platters. Prepare filling. Measure all dry ingredients in bowl. Whisk to incorporate all and break up any light brown sugar lumps. Whisk in melted butter. Whisk in heavy cream/vanilla mixture. Whisk in yolks, being careful not to incorporate too much air. Divide evenly over 2 pies. Yields 2x10'' Pies. Bake 325F in 15 minutes. Bake 315 for 5 minutes. Cool on rack. Refrigerate. Dust with 10x before serving. Serve COLD!
