Crab Asparagus Hotdish image

I remember the first time I had this...My mom made it, and it was so good! I got the recipe, but never made it myself until a few years ago, it just seemed to complicated...Weeeeelllllllll, I feel stupid...it's not that complicated at all...and now I'm glad mom found this, because I might just have turned the page and ignored...

Number Of Ingredients 11

1 - 10 oz *package of frozen asparagus, thawed and drained
1 c *flaked crab meat
1/2 c cheddar, shredded
4 Tbsp butter, divided
2 Tbsp flour
1 c milk
1/2 tsp ground mustard
1/2 tsp salt
1/8 tsp pepper
2 tsp lemon juice
1 c bread crumbs

Steps:

  • 1. Place asparagus into a 2 quart casserole dish that that has been sprayed with non stick spray. Top with crab, sprinkle cheese over crab and set aside.
  • 2. In a medium saucepan melt 2 tablespoon butter, stir in flour until smooth. Whisk in milk, mustard, salt and pepper. Bring to a boil over medium heat, cook and stir 1-2 minutes or until thickened.
  • 3. Remove from heat, stir in lemon and pour over asparagus mixture...
  • 4. Melt remaining butter, toss with crumbs and sprinkle over top of casserole, bake uncovered at 350 for 45 minutes.
  • 5. *I use fresh asparagus that I've steamed *I use a good imitation crab you get from the meat department at most grocery stores, and chop it up a bit.
