Crab and Spinach Bisque image

This recipe is easy and impressive - not to mention delicious.

Number Of Ingredients 14

1 c chopped onion
1/4 can(s) chopped celery
1/4 c chopped bell pepper
3 Tbsp chopped parsley
4 Tbsp unsalted butter
2 Tbsp flour
3 c heavy cream or evaporated skim mik (hot)
1 c chicken broth (hot)
2 pkg frozen chopped spinach (drained)
1 lb lump crabmeat
1 bay leaf
1 tsp Worchestershire sauce
dash(es) basil and thyme
salt and pepper

Steps:

  • 1. Melt butter, saute' all ingredients until done.
  • 2. Add flour and blend well.
  • 3. Add cream and simmer for 10 minutes.
  • 4. Place spinach in food processor with chicken broth, puree'.
  • 5. Add pureed mixture to cream. Season to taste.
  • 6. Add crabmeat. Do not boil.
