A teacher at school made this for a party we had. it was a HUGE hit. Everyone asked for the recipe. I have made this several times since and someone always asks for the recipe!

Number Of Ingredients 9

2 - small cans of white sweet corn
1 - can black-eyed peas
1 - can black beans
3 or 4 - celery stalks, finelt chopped
1/2 - red onion, finely chopped
1 - small can jalapenos, chopped, rinsed & drained
1 cup(s) olive oil, extra virgin
1 cup(s) sugar
3/4 cup(s) apple cider vinegar

Steps:

  • Drain the corn, beans and black-eyed peas in a colander. Place the vegeatables in a large mixing bowl. Add in the clelry, red onion and jalapenos.
  • In a saucepan heat the sugar, oil and vinegar to dissolve the sugar. Cool. Add to the corn mixture. Stir and cover with wrap. Chill overnight to let set up.
  • The next day, drain well and serve with tortilla scoops or Frito scoops.
