COUSCOUS WITH BROCCOLI image

Yield 6 3/4 cup

Number Of Ingredients 10

2 Medium Plum Tomatoes
1/4 c chopped green onions (2)
1/4 c raisins
1/4 tsp dried basil
1/4 tsp ground cumin
1/4 tsp black pepper
1 Tbsp Olive Oil
2 cups water
2.5 cups broccoli florets
1.75 cups couscous

Steps:

  • In a mixing bowl, combine tomatoes with green onions and all seasonings and olive oil. Place water and broccoli florets in saucepan and bring to boil over high heat. Lower to medium and add the tomato mixture and couscous. Cover, remove from heat, let stand 5 minutes. Fluff with fork before serving
