Steps:

  • Preheat oven to 180oC.
  • Place courgettes on baking sheet, drizzle with oil and roast for 8mins
  • Transfer courgettes to sheet of grease proof paper and set aside unwashed tray
  • Roll out pastry to 30.5cm2 and place on baking sheet
  • Whisk 1 egg with the creme fraiche. Add 50g cheese and garlic and parsley. Season.
  • Arrange courgettes on middle of the pastry. Pour egg mix over the top. Scatter crumbs and remaining cheese over top. Gather up the sides to create a rim. Chill 10mins. Brush pastry with other egg and bake for 30mins
