Country-Style Pork Ribs With Red Wine Vinegar Sauce image

Number Of Ingredients 14

FOR THE SAUCE:
1/2 cup red wine vinegar
1/4 cup ketchup
3 tablespoons soy sauce
2 tablespoons honey
1 teaspoon minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon Tabasco hot pepper sauce
1/4 teaspoon freshly ground black pepper
1/4 teaspoon chili powder
4 pounds country-style pork ribs (8 ribs), trimmed of excess fat
kosher salt
freshly ground black pepper
Hickory chunks or chips soaked in water for at least 30 minutes

Steps:

  • TO MAKE THE SAUCE: In a medium saucepan combine the sauce ingredients and bring to a boil. Reduce heat and simmer for about 15 minutes, stirring occasionally. Remove from the heat and allow to cool to room temperature. Pour some of the sauce into a small bowl to use for basting the ribs.Allow the ribs to stand at room temperature for 20 to 30 minutes before grilling. Season with salt and pepper. Follow the grill's instructions for using wood chunks. Grill over Indirect Medium heat until the meat is very tender, 1 to 1 1/4 hours, turning once halfway through grilling time. During the last 20 minutes of grilling time, baste with the small bowl of sauce. Serve warm with the remaining sauce on the side.From Weber's Big Book of Grilling.
