Country Chocolate Chip Cookies image

1 cup softened butter or margarine (I use butter-flavored Crisco)
1 cup peanut butter (smooth or creamy)
1 cup sugar
2/3 cup packed light brown sugar
2 eggs
1 tsp vanilla
2 Tbsp water
2 cups flour
1 cup oatmeal (quick or regular)
1/2 tsp salt
2 tsp baking soda
1 cup chocolate chips (or more to taste) (good with M&M's, too)
1 cup chopped walnuts or peanuts

Steps:

  • Cream together Parkey margarine, peanut butter, sugar, brown sugar, eggs, vanilla, and water until smooth.(I use a heavy-duty electric mixer.) Combine flour, oatmeal, salt, and baking soda; mix well. Add to creamed mixture in 2 or 3 batches, stir well after each addition. Stir in chocolate chips and chopped nuts.
  • Place heaping teaspoonfuls 2 in. apart on ungreased cookie sheets.
  • Bake in preheated 350 degrees F oven for 10-12 minutes. Cool on cookie sheets a few minutes before removing to wire racks to cool.
