CORNMEAL OVEN-FRIED CHICKEN image

Number Of Ingredients 12

1/2 C. dry breadcrumbs
1/2 C. cornmeal
1/4 C. grated Parmesan cheese
1/4 C. minced fresh parsley
3/4 t. garlic powder
1/2 t. salt
1/2 t. pepper
1/2 t. onion powder
1/2 t. dried thyme
1/2 C. buttermilk
1 fryer(3-4 lbs) cut up and skin removed
1 T. butter melted

Steps:

  • In large plastic bag combine all dry ingredient. Place milk in a shallow bowl. Dip chicken in milk, then add to bag a few pieces at a time and shake to coat. Place in a 13"x9" baking pan coated with cooking spray. Bake @ 375 degrees for 10 minutes, drizzle with the butter . Bake 30-40 minutes longer until done.
