Steps:
- 1. Place corned beef in a large pot.
- 2. Cover with cold water. Simmer for 2 1/2 hours, skimming fat off liquid when necessary.
- 3. Add onions and carrots. Cover and simmer 1 hour.
- 4. Add cabbage and simmer uncovered for 20 minutes.
- 5. Remove meat to a platter and slice. Arrange cabbage, carrots, and onions around the sliced brisket.
- 6. Season to taste with fresh ground pepper and serve.
