Corned Beef Baked in Potatoes image

Number Of Ingredients 11

6 pieces baking potatoes
2 tablespoons butter
1 piece onion, minced
1 clove garlic, minced
3 cups corned beef, cooked and ground
2 piece eggs, beaten
3 tablespoons cream
1 tablespoon Dijon mustard
1/4 cup parsley, minced
4 dashes tabasco
1 salt and pepper

Steps:

  • Preheat oven to 400 degrees. Scrub and dry potatoes, rub skins with oil and bake for an hour or until potatoes are soft
  • Melt Butter in a skillet add onion and garlic, saute until soft and transparent
  • Cut baked potatoes in half, scoop out insides. Mash lightly. Reserve shells
  • Mix together the mashed potatoes with the remaining ingredients and spoon lightly into the shills.
  • Return to oven and back at 350for 35 minutes.
