CORN CHOWDER - MAROSE image

Number Of Ingredients 10

1/4 lb. bacon
1 large onion, diced
3 c. hot water
2 large potatoes, peeled and diced
1/2 tsp. thyme
salt and pepper to taste
3 c. cream style corn
2 c. evaporated milk
fresh parsley sprigs
1/4 c. cornstarch to thicken

Steps:

  • Fry bacon in skillet; drain on paper towels. Reserve drippings. Saute onion in reserved drippings for 10 minutes, or until onion is translucent. Drain. Combine potatoes, thyme, salt, and pepper with water in medium saucepan. Add reserved bacon and onion. Cover and simmer over low heat for 20 minutes, or until potatoes are tender. Add corn and milk. Heat, but do not boil. Thicken with corn starch if necessary. Garnish each serving with a parsley sprig.
