CORN AND CRABMEAT CHOWDER image

Yield 4-6 servings

Number Of Ingredients 9

3 ears cooked corn (about 1 ½ cups)
5 Tbs butter
5 Tbs flour
2 C fresh or canned chicken broth
2 ½ C milk
¼ C finely chopped onion
¾ C picked over, fresh or frozen crabmeat (about 6 oz.)
1/8 tsp cayenne pepper
½ C heavy cream

Steps:

  • Melt 4 tablespoons of butter ina saucepan, stirring with a wire shisk. When melted, add the flour, stirring until blended. Add the broth and milk, stirring rapidly with the whisk. Cook, stirring frequently, for about 10 minutes. Meanwhile, melt the remaining butter in another saucepan and add the onion. Cook until wilted. Add the crabmeat, corn, salt, pepper and cayenne. Cook briefly and add to the sauce. Add the cream and bring to the boil. Simmer gently for about 5 minutes.
