- Preheat oven to 450 degrees. In a food processor, combine flour, baking soda, baking powder, and salt. Add 6 TBS of cold, cubed, unsalted butter. Pulse until combined (mixture should be crumbly). Slowly add cold buttermilk and continue to combine until dough is formed. Flour a flat surface and knead dough a few times. Roll out to 1-inch thickness and use a biscuit cutter (or anything round) to cut out biscuits. Put onto a baking tray and bake for 8-10 minutes. Marinate chicken in pickle juice for as long as possible (30 mins - 1 hour preferred). In a separate bowl, combine milk and eggs. In a large ziplock bag, pour flour, powdered sugar, paprika, salt, black pepper, and garlic powder. Once chicken is done marinating, cut each breast in half. Dip each piece of chicken into the egg and milk mixture and then into the flour bag. Shake bag until the chicken in completely coated. When all four are completed, heat peanut oil in a frying pan and fry for about 2 minutes on each side or until golden brown and cooked. Transfer onto a paper towel and serve onto the biscuit.
