I love these bean salad recipes so much. There used to be a lady at work who was always saying, "Cool beans." So I've borrowed her phrase for the name of this recipe, These are very "cool" beans indeed! Recipe: eatingrules.com Photo: tasteofhome.com

Number Of Ingredients 9

1 can(s) yellow wax beans
2 can(s) green beans
1 can(s) red kidney beans
1 can(s) garbanzo beans (chickpeas)
1 small onion, finely diced
1/4 cup(s) sugar
1 teaspoon(s) freshly ground black pepper
1/2 cup(s) vinegar (distilled white, or apple cider)
1/4 cup(s) extra virgin olive oil

Steps:

  • Empty all the beans into a colander and rinse.
  • Combine all ingredients in a large mixing bowl and stir until thoroughly mixed.
  • Empty mixture into a large, air-tight container and refrigerate for at least a few hours or overnight, shaking the container occasionally to help marinate. Serve cold.
