Conch Chowder image

I got this recipe when I was in Bermuda. It was good--different than any chowders I've ever had. Conch (pronounced "Conk") is tough, but chopped up makes it so tasty.

Number Of Ingredients 14

2 large conchs
1 lb potatoes
1/4 lb salt pork
2 medium onions
1 bell pepper
1 small can of tomatoes
1 small can tomato paste
1 c hot water
1 bay leaf
2 clove garlic
1 Tbsp barbeque sauce
1/2 Tbsp poultry seasoning
1/2 tsp black pepper
3/4 tsp salt

Steps:

  • 1. Saute onions, bell peppers and salt pork, all chopped fine, until well cooked. Add all other ingredients except conch and potatoes.
  • 2. Pound conchs to break up tissue and chop into small pieces. Add to pot which should now be boiling. Cook for two hours over low fire. Add potatoes and cook until done.
