Company Breakfast Casserole image

I fixed this for breakfast when my daughter and her family were visiting from out of state. It made a wonderful breakfast, so tasty! Serve with toast, biscuits or anything you like. Enjoy!

9 frozen hashbrown patties (like the ones at mcdonalds)
1 1/2 lb bulk breakfast sausage (mild or hot, your preference)
12 large eggs
3/4 c heavy cream
1/2 c shredded sharp cheddar cheese
1 tsp salt
black pepper to taste (optional)
additional cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees. Spray a 9 X13 baking dish with cooking spray and set aside.
  • 2. Brown sausage until cooked through and set aside. Combine eggs, heavy cream, salt, cheese and beat thoroughly.
  • 3. Layer hashbrown patties in the bottom of the prepared pan. Spoon sausage over hashbrowns. Pour egg mixture over sausage. Sprinkle addition cheese on the top.
  • 4. Cover with foil and bake for 40 to 45 minutes. Remove from oven and remove foil. Sprinkle additional cheese, if desired and return to oven and bake 10 more minutes or until knife inserted in the center comes out clean and casserole is browned. Let stand 5 to 10 minutes before serving.
