COMMISSARY CARROT CAKE image

Yield 8 slices

Number Of Ingredients 17

1 1/4 c corn oil
2 c brown sugar
2 c flour
1 t cinnamon
2 t baking powder
1 t baking soda
1 t salt
4 eggs
1 lb (4 c) grated carrots
1 c golden raisins
1 c chopped pecans
Cream cheese icing
8 oz butter
8 oz cream cheese
1 lb confectioners sugar
1 t vanilla
Coconut 4 oz or 1 1/2 c sweetened coconut

Steps:

  • Preheat oven to 350. Grease and flour bundt or tube pan. Whisk oil and sugar. Sift cinnamon, salt, baking soda, baking powder and flour. Add dry ingredients to the sugar/oil Alternately add the eggs one at a time. Add carrots, raisins and pecans and bake 70 minutes. When cake is cool ice with cream cheese icing and then cover with toasted coconut (Spread coconut on a cookie sheet and place in a 300 degree oven for 10-15 minutes).
