Colorful Rice Casserole image

1 tablespoon olive oil
1 1/2 pounds zucchini, thinly sliced
3/4 cup chopped scallion
2 cups corn kernels (frozen or fresh if frozen, defrost)
1 (16-ounce) can no-salt added chopped tomato, undrained
1/4 cup chopped parsley
1 teaspoon oregano
3 cups cooked rice (white or brown)

Steps:

  • 1. In a large skillet, heat oil. Add zucchini and scallions, and saute for 5 minutes.2.
