1/3 cup each finely chopped onion, green pepper and sweet red pepper
2 garlic cloves, minced
2 tbsp. olive oil
1 (14-1/2 oz.) vegetable broth
1/4 cup water
1/2 tsp. salt
1/4 tsp. pepper
1 (10 oz.) pkg. couscous

Steps:

  • 1. In a large saucepan, saute the onion, peppers and garlic n oil for 3 minutes. Stir in the broth, water, salt and pepper. Bring to a boil. Stir in the couscous. 2. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. Serve immediately.
