COFFEE AND CREAM CAKE image

Yield 1 8" layer cake

Cake
2 1/2 cups flour
1 3/4 cups sugar
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup vegetable oil
1/2 cup strong brewed coffee
1/2 cup coffee flavored liqueur
3 large eggs
1 cup sour cream
Frosting
1 tsp unflavored gelatin
1/4 cup cold water
2 cups heavy whipping cream
1/4 cup sugar
2 Tbsp coffee flavored liqueur
Garnish: cinnamon sticks, chocolate covered espresso beans

Steps:

  • Cake 1. Preheat oven to 325. Lightly grease and flour 3 8" cake pans. 2. In a large bowl, combine flour, sugar, baking soda, baking powder, and salt. Add oil, coffee, liqueuer, and eggs. Beat at medium speed until smooth. Stir in sour cream and pour into prepared pans. Bake 30-32 minutes. Let cool in pans for 10 minutes, then remove to wire racks and allow to cool completely. 3. Spread frosting in between layers and on top of cake. Garnish as desired and store in refrigerator. Frosting 1. In a small bowl, soften gelatin in cold water and let stand 2 minutes. Microwave on high in 30-second intervals until dissolved; set aside to cool for 5 minutes. 2.In a large bowl, beat cream at medium high speed until slightly thickened. Gradually add sugar, 1 Tbsp at a time, beating until stiff peaks form. Stir in gelatin mixture and liqueur. Cover and chill 4 hours.
