Steps:
- Preheat oven to 350* Prepare a 9x13 pan with cooking spray. Cream together butter, cream cheese and sugar. Beat in eggs, one at a time, vanilla and then mix in the flour. This is when I added the cream of coconut. Spread the batter in the prepared pan. Bake 35-40 minutes or until a wooden pick inserted In the center comes out clean. (as the cake cools it will fall) Cool on a wire rack. FROSTING: Beat together butter, cream cheese, vanilla and add sugar. Mix until well blended. Toast the coconut. Bake until golden. Once the cake is completely cool add the frosting.
