Coconut Apple Pie in Pizza Pan image

This recipe was inspired by another member- I couldn't quite get my head around the ingredients or the directions so this is how I made it.Turned out very good!

Number Of Ingredients 7

1 - recipe for single pie crust using coconut shortening, or use your regular recipe
21 ounce(s) can apple pie filling
1/2 cup(s) sweetened coconut, shredded
1/2 cup(s) dark brown sugar
1/2 cup(s) all purpose flour
1/4 cup(s) butter
1 tablespoon(s) ground cinnamon

Steps:

  • Preheat oven to 350^. Make crust according to directions and roll and place on pizza pan -crimp a small edge. Can be made in 9x13 inch pan that you line with foil for easy lift out to cut into squares after baking. --- Open pie filling and while still in the can dice it up a bit, then spread evenly over pie crust. --- Note: Other canned pie filling can be used for this recipe: Raspberry is delicious and blueberry and lemon too!
  • In a small bowl, combine flour, coconut ,brown sugar and cinnamon. Add cut up pieces of butter and mix in with a pastry blender to make a crumbly mixture.
  • Sprinkle this coconut mixture evenly over the apples filling and bake for 25 minutes or until lightly golden. Remove from oven and glaze top with the following glaze.
  • Glaze: 1 cup powdered sugar 2 Tablespoons milk -more or less 1 teaspoon lemon juice Place all ingredients in a small bowl and combine until smooth. Adjust texture so to drizzle stage and drizzle over cooled pie.
