1 c butter, softened
2 c granulated sugar
3 large eggs
1/2 c apple juice (can sub water for it)
1 Tbsp vanilla extract
2 1/4 c unbleached white flour
1 tsp baking powder
1/2 tsp baking soda
1 - 1/2 tsp cinnamon, ground
1/2 tsp allspice, ground
1/2 tsp apple pie or pumpkin pie spices
2 Tbsp cocoa, unsweetened
1 tsp salt
2 packed c granny smith or similar apple, finely chopped (i use food processor)
1 c semi sweet chocolate chips
GLAZE
2 c c & h powdered sugar
3 oz creamed cheese
3 Tbsp butter, softened
1 dash(es) salt
1 tsp vanilla extract
1 - 2 Tbsp evaporated milk if needed to make a thick drizzle flow over cake

Steps:

  • 1. Preheat over to 325 degrees. Prepare 10" bundt pan by greasing and flouring it or spraying with cooking spray (Pam) Set aside.
  • 2. In a large mixing bowl, cream together the sugar & butter until fluffy. Beat in eggs 1 at a time. Add apple juice or water and vanilla. Beat 1 minute longer. In another bowl, sift together the flour, cocoa, baking soda, and spices. Add dry ingredients slowly to creamed mixture and mix well. Beat for 2 minutes. Fold in chocolate chips & apple. Spoon batter into prepared bundt pan. Bake for 60 to 70 minutes until cake tests done. Let cool in pan for 15 minutes. Invert onto a wire rack and cool completely. Serve plain, dusted with powdered sugar or topped with glaze. Enjoy!
  • 3. Glaze directions: Cream together butter and creamed cheese till smooth. Add in powdered sugar, salt, vanilla, and milk and beat until it is the right consistancy to make a thick glaze for the top of the cake.
