Steps:
- Cook spinach until wilted, but not overcooked, about 3-5 minutes. Drain thoroughly. Set aside. In a food processor, combine cream cheese, sour cream, and undrained artichoke hearts. Pulse until blended. Add drained peppers or pimentos and Parmesan cheese. Pulse until fairly smooth, less if you like a chunkier dip. Transfer mixture to a 1-1/2 quart baking dish. Stir in spinach. Microwave on high for 7 minutes until thoroughly heated through and bubbly around the edges. Stir and serve with chips or crackers. This can also be served in a bread bowl. Scoop out center of a round loaf of bread, saving bread chunks for dipping. After heating the dip, pour into bread bowl and serve.
