- Melt the butter in the microwave.
- Warm the milk very lightly not to kill the yeast (20°C). Mix the yeast with the milk and stir to dissolve it.
- Separate the whites from the yolks. In a large bowl, mix the sifted flour, warm milk and yeast, oil, salt, sugar and egg yolks and mix with a fork. When it is smooth, add the lukewarm butter.
- Cover the bowl with plastic wrap and wait for 2 hours or for the volume of the dough to double.
- While your pan heats, beat the egg whites. The egg whites are at room temperature. The pan needs to be extremely hot. After that, decrease the hob to medium heat.
- Carefully incorporate the egg whites to the batter. Try to keep a maximum of air in.
- Grease the pan with butter or oil and form a small pancake. It needs to cook 3 to 4 minute on each side Bonne dégustation!!
