CITRUS MARINADE FOR GRILLED SHRIMP image

For marinade:
1/4 cup of lemon juice
1/4 cup of lime juice
1/2 cup of orange marmalade
1 tablespoon of vegetable oil
1 large garlic clove, pressed
1 tablespoon of fresh parsley
1/4 teaspoon of red pepper
2 pounds of shrimp
I marinated 2 lbs. (21/25) versus the recommended 12 ounces and seemed to have plenty of marinade
*2 limes and 2 lemons recommended but I used 1 of each and got a perfect 1/4 cup from both.

Steps:

  • Combine marinade ingredients in the container that will be used to marinate the shrimp. A large zip lock bag will do. Add shrimp and marinate 45 minutes to an hour in the refrigerator. No MORE than an hour or the citrus juices may toughen up the shrimp. Grill on skewers or in grill skillet, etc. until shrimp become opaque. Enjoy quickly while they're hot.
