Cinnamon Swirl Bread - So Easy image

This is a wonderful, yet easy quick Cinnamon bread. It is great to use when making french toast. Very moist and tasty... Enjoy! My photos

Number Of Ingredients 16

2 cup(s) all-purpose flour (unbleached)
1 cup(s) white sugar
2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) ground cinnamon
1 teaspoon(s) salt
1 cup(s) buttermilk
1/4 cup(s) vegetable oil
2 - eggs
2 teaspoon(s) vanilla extract
1/4 cup(s) pecans, chopped ( optional )
TOPPING / I DOUBLE THIS
3 tablespoon(s) sugar
1/2 teaspoon(s) cinnamon
2 teaspoon(s) butter, softened
1/4 cup(s) chopped pecans ( optional )

Steps:

  • Preheat oven to 350 degrees F. Grease one 9x5 inch loaf pan.
  • In large mixing bowl add the first 10 ingredients, beat 3 minutes.
  • Pour into prepared loaf pan. Smooth top.
  • Combine 3 tablespoons white sugar, 1/2 teaspoon cinnamon and butter, mixing until crumbly.
  • Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect. (sprinkle top with 1/4 cup pecans.) I usually double the cinnamon mixture.
  • Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.
  • You can glaze with a simple confectioners' sugar, cream and vanilla mixture. I don't always... It's also great with the addition of plumped up raisins.
