Cinnamon Applr Muffins image

These small batch muffins are perfect with a cup of tea.

Number Of Ingredients 16

CINNAMON APPLES
1 c peeled & diced apple(one apple)
1 Tbsp butter
2 Tbsp brown sugar
1 tsp cinnamon
MUFFIN BASE
2/3 c flour
1/4 tsp baking soda
1/4 tsp cinnamon
3 Tbsp butter, softened
1/4 c sugar
1 large egg white
3 Tbsp yogurt
1/2 tsp vanilla
TOPPING
1/4 c sugar in the raw

Steps:

  • 1. Cinnamon Apples In a small saucepan, combine apples, butter, brown sugar and cinnamon. Bring to a simmer, cook until apples are softened and sugar is caramelized. Remove from heat and set aside.
  • 2. Muffins Preheat oven to 375 degrees. Line muffins tin with liners.
  • 3. In bowl whisk together flour, baking soda, and cinnamon.
  • 4. Cream together butter and sugar.
  • 5. Add egg white, yogurt and vanilla. Mix well.
  • 6. Stir in flour until combined.
  • 7. Fold in apples so they are evenly distributed throughout the batter.
  • 8. Divide the batter among the muffin cups.
  • 9. Sprinkle tops with sugar in the raw.
  • 10. Bake for 15 to 18 minutes. Cool in pan 10 minutes, transfer to cooling rack.
  • 11. Enjoy!
