Steps:
- 1. Preheat oven to 400. Line a standard size 12 cup muffin tin with paper liners.
- 2. For streusel: Combine 3 tablespoons flour, 3 tablespoons brown sugar, and 1/4 teaspoon of cinnamon. Cut in 2 tablespoons cold butter until it resembles a coarse crumb. Set aside.
- 3. For muffins: Combine apples, cinnamon, brown sugar and nutmeg. Set aside.
- 4. In a large bowl combine flour, sugar, baking powder and salt.
- 5. In a small bowl combine milk, egg, butter and vanilla.
- 6. With a wooden spoon add the wet ingredients to the dry ingredients just before they come together fold in apples DO NOT OVER MIX.
- 7. Divide batter evenly between each muffin cup and and top each with streusel. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
