CILANTRO LIME CORN AND GREEN BEANS image

1/4 cup shallot, finely chopped
2 tablespoons olive oil, or unsalted butter
3/4 pound green beans, trimmed and cut crosswise into 1/4 " pieces
3 cups corn, removed from cob
1 teaspoon salt
1 teaspoon lime zest, finely grated
1 teaspoon chili powder, to taste
2 teaspoons lime juice, to taste

Steps:

  • Cook shallot in oil or butter in a 12" heavy skillet over moderate heat until softened, about 3 minutes. Add beans, corn and salt and cook over moderate heat, stirring, until vegetables are tender, about 6 minutes. Remove from heat and stir in lime zest, chili powder, and fresh lime juice.
