CILANTRO LENTIL SALAD image

Number Of Ingredients 14

1/2 lb lentils, rinsed
1 each - yellow, red and green pepper -cored, seeded and diced
1/2 cup diced carrot
1/2 cup diced cucumber
1/2 cup diced tomato
1/2 cup crumbled feta
1/2 cup sliced kalamata olives
1/4 cup diced red onion
2 cloves garlic, peeled and minced
1/2 cup fresh chopped cilantro
1/4 cup red wine vinegar
1/2 cup olive oil
3/4 tsp salt
1/4 tsp freshly ground black pepper

Steps:

  • Place lentils in large saucepan, cover with water and bring to boil. Turn heat to low, cover and simmer for 30-40 minutes until tender. Drain, transfer to bowl and add remainder of ingredients. Toss to mix.
