CHUNKY GAZPACHO image

Number Of Ingredients 13

8 plum tomatoes, cut into quarters
1 large red bell pepper, seeded, cut into quarters
1 medium seedless cucumber, peeled and cut into chunks
¼ cup red wine vinegar
1 ½ Tbls fresh lemon juice
¼ cup olive oil
1.5 cups tomato juice
pinch cayenne pepper
1 tsp salt
½ tsp fresh black pepper
¼ cup copped fresh dill or 2 Tbls dried dill
2 Tbls minned onion
Fresh dill for garnish

Steps:

  • 1. Put tomatoes into a food processor and pulse until very coarsely chopped but not pureed. Remove from goal. Repeat with pepper and cucumber 2. In a large boal, whisk together the vinegar, lemon juice, oil, tomato juice. Add cayenne, salt, pepper, and chopped dill to the vinegar mixture. Add the chopped veggies and minced onion and mix well. 3. Serve very cold, garnished with sprigs of fresh dill.
